MYO Pumpkin Puree

Making your own pumpkin puree is so very easy! Well, here are a few pics While making my puree:

Going into my well used oven!
     After baking too long(I forgot the time) but they still came out ok!
Let the pumpkins cool off and then slice them in 1/2 and carefully scoop out the seeds and the stringy part. 


Baking time should only be 1 1/2 hours. Mine baked closer to 2 but the pumpkin seperated from the skin so easily this way.  I was able to just use a tablespoon for this. When you get it all out of the shell, puree it in a food processor or do what I did since I do not own one--mash with a fork.


And here you have it.......pure pumpkin puree.  Looks so pretty and easy peasy!  I'll never buy canned pumpkin again.

MYO Faux Mrs. Dash



  Many people are suffering from high blood pressure and are trying to reduce their sodium intake--myself included.  I love salt.  I mean I really love salt to the point that if the food isn't salted it isn't worth eating.  Did I tell you I LOVE salt. Did I also tell you I have high blood pressure? Really high blood pressure so I am trying to cut back on my salt intake but it is so hard.  I am trying to season my food with herbs and spices to give it more flavor so I discovered this recipe for a homemade herbal salt substitute--no, lets call it a homemade flavor enhancer! Yes, I like that much better--won't have to say the "S" word. So, here is the recipe:

Herbal Flavor Enhancer
  • 1 Tbsp ground cayenne pepper
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried parsley flakes
  • 1 tsp dried savory
  • 1 tsp ground mace
  • 1 tsp freshly ground black pepper
  • 1 tsp dried sage
  • 1 tsp dried marjoram
  • 1 tsp ground dried grated lemon peel
  • 1 tsp paprika
Just mix the above and store in a mason jar or reused spice shaker.
I know this won't be the same as using the "s" word but maybe we'll learn to appreciate the real flavors of  food and lower our blood pressure at the same time!

MYO Spiced Drink Mix


   
    This all-purpose mix is wonderful to have on hand for all types of drinks—hot tea, hot apple cider, coffee, or warm juice drinks!  All taste amazing with this versatile mix added! 

2 lb. Sucanet or brown sugar
5 ½ Tablespoons Pumpkin Pie Spice

Mix in a food processor and store in a mason jar or baggie. Remember if you use the brown sugar, it may harden up but it is still useable.

Use 1 T mix to one cup of drink or 1/4 cup mix to 4 cups drink.

MYO Hot Cocoa Mix


 
  With cooler weather coming, families love hot cocoa!  This is a great, inexpensive mix to keep on hand for a warm fall or winter treat.  

3 cups milk powder
3 cups powdered coffee creamer
3 cups sugar or splenda
1 2/3 cups cocoa powder
 

  Place the above ingredients in a blender and mix well.  Store in a mason jar or baggie.  Use 4-5 teaspoons per cup of hot water.   Use a peppermint stick to add minty flavor or add cinnamon to give it a little Mexican spice!  Don’t forget the marshmallows --Yummy!

MYO Vanilla Extract

     If you have never tried to make homemade vanilla extract, you need to do it ASAP!  It is so aromatic and just as easy as it is good!  Only 2 ingredients are required—alcohol and vanilla beans.  That is it!  Vodka is the most neutral of the alcohol choices, but you can use rum or bourbon if you like.  I do prefer the vodka though.  Vanilla beans can be ordered from Olive Nation and they usually ship the vanilla beans free which is a great perk!  Go to   http://www.olivenation.com/Bourbon-Madagascar-Vanilla-Beans-P84C54.aspx  to order your beans!

   All you need to do is slit each bean almost in half and add to the jar of alcohol in a ratio of 5 beans to 8 oz. alcohol.  Make sure jar is sealed and store in a dark place for 5-6 weeks at least.  Shake it several times a week.  Remember, patience is a virtue—the longer it sits, the better the flavor!  

  If you want you can top off the extract with more alcohol several times before the beans loose their flavor.  Enjoy!

MYO Pumpkin Pie Spice


   With the holidays coming, this may save you a little money! Instead of buying the expensive containers of Pumpkin Pie Spice, just make your own! 

1/4 cup ground cinnamon
1/8 cup ground ginger
1 Tablespoon nutmeg
2 teaspoons ground cloves

½ teaspoon Allspice—optional

Mix all of the above and store in a mason jar or baggie.

MYO Taco Seasoning


 
This is installment 1 of the Make Your Own series to help save you money in the kitchen!  I hope you decide to make your own to know exactly what your family is getting in their food and to also save a bundle on those expensive mixes!

Taco Seasoning

6 Tsp. Chili Powder
5 Tsp. Paprika
5 Tsp. Cumin
31/2 Tsp. Onion Powder
2 1/2 Tsp. Garlic Powder
1/8 Tsp. Cayenne Pepper 
 

Mix all of the above and store in a mason jar or baggie.  7 Tsp. = one packet.  This has a 6month shelf life!

Free Fun Activities Around Alexandria--The Fair Parade




The Alexandria Fair Parade is Wednesday August 27th at 6:45 pm.  It will start at the Campbell County Middle School and end at the Alexandria Fairgrounds and will kick off the 158th Annual Alexandria Fair!  Kids love the parade and all of the candy and treats thrown from the floats, politicians and businesses that participate in the parade.  Bring a bag for all of the booty your children will be getting!  This is a wonderful celebration of life in our fair city so come out and enjoy this free fun activity!

Installation of the water main on Riley Road is still in progress. There are lane closures still happening and traffic is being directed by Alexandria Police.  Please use caution around  Apple Blossom lane and the rear gate of the Alexandria Fairgrounds as that is the area they are working in.

FYI-As you may know, crews have been installing a water main along Riley Road.  Please be careful when driving on the hill this morning.  With the rain, the mud on the road has made it very slippery.  Go Slow!

The Farmer's Market was Open for Business!

I am so excited! The Farmers Market was open for business today!  The Farmer's Market is held every Friday from 3-6pm at the bowling alley in Alexandria.  Here are pics from today's Farmer's Market.

National Association of Letter Carriers Stamp Out Hunger Food Drive


                                 

    Saturday May 10th, is the Stamp Out Hunger Food Drive carried out by the National Association of Letter Carriers.
Please help Stamp Out Hunger in our area!  Collect and bag non-perishable foods like peanut butter, canned meats, vegetables, pasta, and rice and place by your mailbox Saturday morning. All food gathered stays in the area collected and will help feed the needy in our community. Please remember not to place glass jars, or expired items in the bag.   Imagine, if every family donated just one food item, just how much food would be collected to feed the hungry. Help Stamp Out Hunger!

Greenup Street Road Closure

FYI- ROAD CLOSURE: West end of Greenup St. at E. Main St. beginning at 7 AM tomorrow, until Monday morning May 5. No thru traffic the entire time, including evening/night hours. A large crane will be parked on the street for repairs to the water tower at that location. Residents of Greenup St. will need to access Main St. via Jefferson St. or Washington St.

8:35-8:45 Parking will begin in North lot, then over flow to South Lot. The hearse will stage/park on track at the center of the bleachers.
8:45-8:50 Flag raised by CCHS Athletes. National Anthem sang by Melissa Conway.
8:50-8:55 Hearse takes lap around the track while Dave Sandlin speaks about Greg and his life accomplishments. The hearse will be escorted by two CCHS Band of Pride Gators.
8:55-9:00 Prayer led by Jason Ballard.
9:00-9:05 CCHS Fight Song played by the CCHS Band of Pride.
9:05-9:10 Closing remarks and invitation read about refreshments served in the CCMS Cafeteria

Our Garden is started--What about Yours?




Our garden is started.  We planted 8 cabbage plants, one large tomato plant, spinach, lettuce, basil, mint, sage, and  rosemary.  Herbs, lettuce, and spinach are in pots on the front porch.  Cabbage and tomato plant are in a raised bed in the back yard.   It's not too late to set up a raised bed, or lasagna garden!  Come on, Let's Grow Alexandria!

Let's Grow Alexandria!


  I don’t know about you, but making ends meet is getting much harder these days!    After the Polar Vortex, and with the drought in California, the cost of food is going to skyrocket!  Can you afford to keep buying all of your food at the grocery? 

  What happens if the SH#& hits the fan?  What happens if the power goes out and there is no ATM to get cash from to buy food? What happens if there is no food in the grocery store?  What happens if you lose your job?  Do I have your attention yet?

  I hope so!  What would it hurt to grow your own food?  Fresh homegrown produce is so much better for you than produce that is a week old, grown who knows how!  Every bit of food grown is money saved.

    I know a lot of the soil in Alexandria is nasty old clay; hence the nick name of our Garden Club “Claybusters”!  But you can amend your soil.  Add compost, try Lasagna Gardening or raised bed gardens.   

    You can plant blueberries in your landscaping.  Plant a dwarf fruit tree in the yard every year.  Plant grapes along a fence line.   Plant zucchini in your flower beds.  Grow a Meyer lemon tree in your home.  Grow herbs on a windowsill.  Grow sprouts on your kitchen counter.  Whatever you are able to do….just DO it!  Become more self-sufficient.  How accomplished would you feel being able to grow all of your produce for the summer?  How much money would you save? 

   The Dervais Family( http://urbanhomestead.org/urban-homestead) in California  is growing 6000 lbs. per year on the 1/10th acre garden space in downtown Pasadena.  6000lbs!!! Most lots and homes in Alexandria have way more than 1/10 of an acre yard.  We have the capability of producing at least half of that (due to the length of our growing season).  How cool would that be…growing over a ton of food for our families!  So what would you do with a ton of food?  Eat it fresh and preserve it!  Preserving the harvest is not hard to learn these days with the internet and Ball Canning Books.  I taught myself to can and to dry foods and you can too!  

  I feel we need to get back to the basics and eat a healthier diet!  Preservatives and additives in your food that you cannot pronounce cannot be good for you.  Eating less processed food is healthier and more nutritious.   Read the labels on the food in your pantry.  I dare you!  Even the simplest of items have additives.   I guarantee that foods you grow and preserve are better for you than the additive laden food we buy in the supermarket.

   So I challenge the good citizens of Alexandria to grow your own food this summer!  Start out small and go from there.  You will NOT regret it!  Your and your family’s health will thank you for it.  And, oh yeah, your wallet will thank you as well!

CCHS Presents Beauty and the Beast

This weekend CCHS will be presenting it's adaptation of Beauty and the Beast.  Over 70 students are involved with the production making this one of the largest musical production ever by CCHS!  The show times are Friday April 25th and Saturday April 26th at 7:30 pm and at 2 pm on Sunday April 27th.  The musical takes place in the CCHS Auditorium; tickets are $10 per person.
